My Story:

Growing up in my father’s French bistro, I learned the value of quality ingredients, foods made with love and without taking shortcuts. My goal is to create the finest chocolate truffle in the world. More than that, though, my goal is to create that truffle using local ingredients from businesses and farms from California and the Pacific Northwest.

What Makes My Truffles So Unique:

Chocolate truffles were named after the rare European fungus, due to their rich taste and unique appearance, which was far from being a perfect rounded balls. At it's essence, only four things go into a chocolate truffle: chocolate, cream, flavoring, and the process by which those ingredients are combined

Chocolate
I start with Scharffen Berger Chocolate. Scharffen Berger is the one of the few American chocolates that regularly wins awards against the finest European chocolate makers. It is world renowned for its unique taste.

So many chocolate makers, to shave costs, buy cheaper green cocoa beans, and then roast them brown. This makes the beans bitter, requiring extra sugar which dilutes the pure taste of the chocolate. By striking deals with small farmers for a fair wage, Scharffen Berger better controls the source of their cocoa beans. The entire manufacturing process, which takes place in the San Francisco Bay Area, results in a unique chocolate of the finest quality.

Cream
To produce a truly rich truffle, I use all natural organic cream. In addition to being of the highest quality, I only use cream that has not been ultra-pasteurized. This helps gives my truffles their unique texture.

Flavoring
Fruit flavors, sugar, and other flavors are all organic and, whenever possible, sourced from local food growers and manufacturers in Washington State.

Process
Using only these natural ingredients, I handcraft each truffle so that is is each unique. Since I use none of the machinery, molds, or dipping processes often used to make truffles perfectly round, my chocolate truffles retain the unique shape that made these delicacies famous throughout their history.

I forego additives and lower quality ingredients which are commonly used to lengthen truffles' shelf life. The shelf life of my truffles is only 3 weeks, so you can be assured you will always receive the freshest of truffles with your order. You can enjoy them right away or freeze them to enjoy later. Only the purest and most natural ingredients are used for my truffles.
